Two English craft breweries, DEYA Brewing Company and Floc. Brewing Project teamed up for Ever So, a hazy IPA that features heaps of Galaxy, Citra, and Rakau hops, including a Galaxy dry hop mid fermentation.

STYLE GUIDELINES

This beer is being evaluated as a Specialty IPA: New England IPA (21B) in the context of the provisional guidelines of the Beer Judge Certification Program (BJCP) for the said beer style. The most current version of the guidelines can be found on the BJCP website.

TASTING NOTES

Hazy pale straw; off-white head with fair retention. Aroma was fairly high with grapefruit and lemon zest leading the charge. Soft taffy candies and a very low garlic note were evident as the beer settled. Medium-bodied, moderately low carbonation; low gritty/ chalky afterfeel. A bouquet of bright citrus, stonefruit, and tropical fruit flavors was noted at a moderately high level; think of lemon zest, semi-ripe mango, and a touch of cantaloupe. Meanwhile, a bready malt backbone was supportive of the hop flavors. Bitterness was a notch below moderate, while residual sweetness was significantly lower giving Ever So a dry impression. The aftertaste lingered with subtle oats, lemon zest, and a very low peppery spice.

THE VERDICT

Ever So in three words; dry, refreshing, and zesty. The hop profile was delightful with the bright and fruity profile giving this beer a thirst-quenching quality. Despite this, we think there is still room for more intense hop-forward aromas, flavors, and maybe some “ripeness” and “juiciness.”  The soft taffy candy aroma was a memorable aspect, while the restrained bitterness and sweetness appear to have aided in making this beer drinkable. Less of the chalky/ gritty afterfeel could be pursued, but in our opinion, this DEYA-Floc collab is a very good beer.
