The Patrons Project is an initiative by Northern Monk to foster collaboration, creativity, and community between artists, athletes, and creatives across Northern England through curating beers that represent each chosen patron.
The patron for the third series is James Butler, a tattoo artist from Bradford. Butler focuses on creating a contrast between solid black, fine lines, dots, and negative space. His art is noted to be “traditional” western with a modern, ornamental twist.
The Patrons Project 3.05 aka. Once, Twice, Three Times a Whale is a ” Mosaic IPA” brewed in collaboration with New York’s Finback Brewery in 2019. This beer was brewed using three forms of Mosaic hops: leaf, T90, and Cryo Powder and a simple base of pilsner malt and flaked oats.

TASTING NOTES
Once, Twice, Three Times a Whale pours a hazy light yellow beer. The aroma profile is composed of orange citrus, vanilla, and fresh celery. A medium-bodied beer, this Double IPA features juicy sweet tangerines, light fresh vegetal flavors, and some hints of zesty lime. Low bitterness. This beer leaves the palate slightly dry with impressions of bright citrus and lemon custard.
THE VERDICT
Once, Twice, Three Times a Whale is exactly something you would expect from a Northern Monk and Finback collaboration: juicy yet hop-driven, highly potent yet dangerously drinkable. #WhalezBro
