The Chocolate Porter is the first of the Holiday beers from Tony Sindayen of The Marc’s & Tony Brewing Co. from Antipolo City. This complex and malty Baltic Porter was brewed with chocolate and is a proper reminder that ’tis the season to be jolly.

STYLE GUIDELINES

This beer is being evaluated as a Spice, Herb, or Vegetable Beer (30A) with the Baltic Porter (9C) as the base style in the context of the 2015 Beer Style Guidelines of the Beer Judge Certification Program (BJCP). The most current version of the guidelines can be found on the BJCP website.

TASTING NOTES

Opaque ruby brown with a medium-low brown head. Aroma profile could be described as malt-forward as nuts, toasted cacao nibs melded with some indistinct spice (cinnamon/nutmeg). Secondary aromas of dark fruits, hints of alcohol, and vanilla were noted as the beer settled. Medium-full-bodied; moderately high carbonation. The flavor was also malt-forward with prominent chocolate/toasted cacao nibs and supporting spice. Medium bitterness enhanced the chocolate/cacao impressions as a moderately low level of perceived sweetness added some decadence to this beer. The aftertaste lingered long the chocolate and subtle spice duality.

THE VERDICT

Tony Sindayen’s Chocolate Porter is a proper reminder that the Holiday season is definitely here. This Baltic Porter showcased the decadent chocolate character as something natural rather than artificial and overpowering as in some “pastry beers” in the markets today. Despite the richness and complexity in flavor, this dark beer is drinkable relative to a thick and heavy Imperial Stout. Excellent.
