Tony Sindayen tinkers with the hop varieties Sorachi Ace and Ekuanot to create his first beer in 2020– the hazy IPA, Not Enuf Sorris.
Sorachi Ace was cultivated originally by Sapporo Brewery in Hokkaido, Japan in the mid-80s and was then resurrected in the United States in 2006. It is a dual-purpose hop strain that may contribute both bittering and aromatic characteristics to a beer, particularly lemon citrus, orange, dill, and cilantro. Meanwhile, Ekuanot, formerly known as Equinox, is a hop variety that was first released in 2014. It is expected to pitch in aromas of lime citrus, papaya, green apple, green peppers, and herbs to the beer.
STYLE GUIDELINES
This beer is being evaluated as a Specialty IPA: New England IPA (21B) in the context of the provisional guidelines of the Beer Judge Certification Program (BJCP) for the said beer style. The most current version of the guidelines can be found on the BJCP website.
TASTING NOTES
Not Enuf Sorris pours a cloudy orange-yellow beer akin to tropical fruit juice. Orange citrus notes dominate the aroma profile with indistinct vegetal and herbal notes in the background. This is expected given the hops used. Further, this Hazy IPA has a medium body with a prominent juicy blood orange flavor supported by a hint dill and a yeasty or bread-like backbone. Not to mention, there seems to be a deep yet subtle vegetal bitterness binding all the brighter flavors together.
THE VERDICT
With Not Enuf Sorris, it seems Tony is taking the juiciness of his beers a notch higher. With this, we look forward to his next creations.
